Strawberries Stuffed with Cheesecake

Yield: approximately 24

Ingredients:

  • 1 lb large strawberries
  • 8 oz. cream cheese, softened
  • 1/4 – 1/3 C powdered sugar
  • 1 tsp vanilla extract
  • graham cracker crumbs
  • chocolate for drizzling

Directions:

  1. Rinse strawberries and hollow out the tops of strawberries with a paring knife
  2. Beat together cream cheese, powdered sugar, and vanilla until creamy.
  3. Transfer mixture to a piping bag fitted with any tip or Ziploc bag with the corner snipped off. If the filling is too soft to pipe, refrigerate for a few hours.
  4. Fill strawberries with cheesecake mixture and sprinkle graham cracker crumbs on top.
  5. Drizzle melted chocolate onto the strawberries.
  6. If not serving immediately, refrigerate until serving.
